Crockpot Chicken Parmesan

2 to 4 boneless, skinless chicken breasts
1/2 cup Italian seasoned bread crumbs
1/4 cup parmesan cheese
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 egg
mozzarella cheese
jar of marinara sauce
pasta

1. Pour olive oil in crockpot, coating the bottom.(I just eyeballed this. I have a large crockpot so I just poured some in and started moving it around.)
2. Beat egg in dish.
3. Mix the bread crumbs, parmesan cheese, salt and pepper in another dish.
4. Dip chicken into egg, then coat all sides of the chicken with the bread crumb mixture.
5. Place the chicken in the bottom of the crockpot. (I used 4 pieces and it fit perfectly in the bottom.)
6. Sprinkle mozzarella cheese over chicken. (The site where I got this recipe didn't say how much, so I just sprinkled a little on top. Next time I think I will use more.)
7. Pour marinara sauce over everything. (I also poured a small can of tomato sauce on top and seasoned it like I would my spegetti sauce.)
8. Cook on High for 3 to 4 hours or Low for 6 to 7 hours. (I cooked mine for a little over 3 1/2 hours and the chicken was perfect!)
9. Serve over pasta and top with more cheese if wanted.

This is something I will definitely make again! It was really yummy!!!

It gets me every time...

I was folding laundry in my bedroom after putting my boys to bed. They were watching "Marley and Me" in my room tonight. I had just started folding when the part came on when Jenn has a miscarriage. I started bawling!!! That part always gets me. It reminds me when I had my miscarriage. Mickey would not leave my side. At the time, he was only 3 months old, but it was like he knew that I needed him to be next to me. I have probably seen the movie at least a dozen times, and I ALWAYS cry at that part.

2012--Already!!!

Wow! It is January 22 already. January 2012 is almost over. Every week I think about posting a new blog, but time is always slipping away.

Well...I'm hoping this year is different. About 3 times a year, I make new goals. I don't believe in New Years Resolutions anymore. I read an article about 5 years ago that said that most people don't think of the word "resolution" as a positive word. So, every year at the new year, I make New Years Goals. I also make Summer Goals and Back to School Goals. I have made 12 goals this year and so far, I have followed about half of them. Most of the goals I have kept so far have to deal with writing. Even though I am a math teacher, I really enjoy writing. Whether it is in a journal, on this blog or trying my hand a fiction. Journal writing has always been my favorite type of writing. I have been keeping a journal since I was in 8th grade. For the past 5 years, I also start a new journal at the beginning of the year whether or not I am finished filling the pages from the previous year (another suggestion from that same article from above). It always feels so wonderful to start on a new clean journal each and every year. Hopefully, I will have at least 12 entries from 2012!
